Birhanu Dido, a farmer from Halo Hartumi village in the rural area of Gedeb, Ethiopia, achieved 19th place in the 2021 Cup of Excellence. To mark this distinction, his coffees are now labeled with “#19” following the name of the origin.
For processing, only optimally ripe red cherries are hand-picked, then carefully sorted on raised beds. Unripe cherries are removed, and the selected cherries are spread thinly for sun-drying, which takes about 16–18 days. The raised African beds ensure proper airflow around the cherries, promoting even drying until the moisture content reaches 11–12%.
The result is a coffee of remarkable clarity and refinement—almost unexpected for a natural. From the very first pour, it releases an elegant floral fragrance, delivering a tea-like, fruity cup.
