Renowned worldwide as a region producing some of the finest coffees, Yirgacheffe has earned its place as a name synonymous with top quality. Within it, the Kochere area is particularly famous, blessed with abundant water resources and numerous washing stations, making it one of the key origins of exceptional Yirgacheffe coffees.
During the hottest hours of the day, harvested cherries are covered with plastic sheets to prevent rapid drying. Instead, a slow drying process of around 20 days—twice the usual duration—is applied. This ensures even moisture distribution within the beans, resulting in a coffee that is both complex and remarkably clean in flavor.
The cup profile is full-bodied, with layered acidity balanced against gentle bitterness, and finishes with a distinctly floral aftertaste.
