María runs a small 1.9-hectare farm and has been cultivating coffee for more than 30 years. Today, she works alongside her daughter Estefanía, focusing their efforts on specialty coffee production.
In the past, their coffees often went unrecognized, as the rush to harvest and process led to compromised quality. With guidance from cuppers and agronomists, however, they thoroughly revised every stage of production—from cultivation and harvesting to fermentation and drying. Now, only fully ripe cherries are carefully selected, followed by 26 hours of fermentation, double washing, and a combination of sun and parabolic drying over 15 days. The result is a coffee with clean, vibrant, and floral character.
For María and Estefanía, high-quality coffee has become both a means of livelihood and a path toward modernization and improved living conditions. They continue to embrace the synergy between better quality and better lives, challenging themselves to keep raising the bar.
