Basic Recipe

Brew using water heated to your preferred temperature between 90–92°C.

Slowly pour 40g of water, making sure to wet all the coffee grounds.

Pour another 40g in a circular motion, moving from the outside toward the center.

Pour 40g in small circles around the center.

Pour 60g, gradually widening the circles.

2:00
Pour the final 60g in a circular motion, moving from the center outward.
