At Finca El Diviso, the focus is on cultivating the rare and exceptional Pink Bourbon variety — a natural hybrid of Red and Yellow Bourbon. Known for its distinctive pink-hued cherries, this variety produces a cup characterized by floral aromatics, bright acidity, and refined sweetness. The cool, high-altitude climate slows down the ripening process, enhancing both sugar concentration and flavor complexity. Although Pink Bourbon is notoriously difficult to harvest at perfect ripeness, the farmers carefully handpick each cherry to maximize its full potential.
The Lasso brothers, who manage the farm, studied specialty coffee production and quality control at SENA (Colombia’s National Training Service). Their approach combines traditional cultivation practices with a scientific mindset, incorporating innovative fermentation and drying techniques. Through their meticulous micro-lot production, they pursue complex and sophisticated flavor profiles. Their coffees have earned recognition in international competitions and have been featured by barista champions across Europe, establishing them as leading figures in Colombia’s new generation of coffee producers.
